Scalloped Mixed Vegetables with Cheese

INGREDIENTS:
1 head cauliflower (cut in flowerets) 1 lb fresh peas (shelled or frozen-drained) 3 carrots (diced in small cubes)
1/2 lb boiling onions 3 cups milk 2 teaspoons salt
4 tablespoons whole wheat pastry flour 2/3 cup sharp cheddar cheese



1 Steam all vegetables separately until half done. Remove to a baking dish. Combine remaining ingredients and pour over the vegetables. Sprinkle with paprika. Bake uncovered at 350 F until tender and brown around the edges.
