| INGREDIENTS: | ||
| 2 lbs carrots | salt | 1/4 lb butter |
| 1/2 cup white sugar | 1/2 cup brown sugar | 1/2 cup cooking liquid |

| 1 | Peel and trim carrots. Cut in half, crosswise. Place in saucepan. Barely cover with cold water. Add a little salt. Bring to boil. Boil gently 3 minutes. Drain well, reserving 1/2 cup cooling liquid. Melt butter in large skillet. Add carrots, sugar and reserved liquid. Sprinkle with a little nutmeg. Cook gently until liquid evaporates and sugar has glazed and browned the carrots nicely. |
