Glazed Carrots

INGREDIENTS:
2 lbs carrots salt 1/4 lb butter
1/2 cup white sugar 1/2 cup brown sugar 1/2 cup cooking liquid
nutmeg



1 Peel and trim carrots. Cut in half, crosswise. Place in saucepan. Barely cover with cold water. Add a little salt. Bring to boil. Boil gently 3 minutes. Drain well, reserving 1/2 cup cooling liquid. Melt butter in large skillet. Add carrots, sugar and reserved liquid. Sprinkle with a little nutmeg. Cook gently until liquid evaporates and sugar has glazed and browned the carrots nicely.
