Old Settlers Squash in a Skillet

INGREDIENTS:
2 talbespoons butter or margarine 1 small onion, sliced 1/4 cup water or tomato juice
2 tablespoons chopped green pepper 1/4 teaspoon pepper 1 bay leaf
1/2 teaspoon crushed basil 2 yellow summer squash 2 medium zucchini
salt to taste



1 Melt butter in skillet. Saute onion slightly. Add liquid and green pepper. Cover and cook 5 minutes. Add pepper, bay leaf, basil and squash. Cover and simmer until squash is tender. Do not overcook. Salt to taste.
