INGREDIENTS:
6 broiler/fryers, or a 5-lb fowl 2 stalks celery 1 medium onion
salt 2-1/2 cups water 6 T. butter
1/2 cup flour 1 cup milk 2 cups strained chicken stock
1 t curry powder 1 t lemon juice 1 cup mayonnaise
2 10-oz pkgs. frozen broccoli pimiento strips



1 Simmer chicken with celery and onion in lightly salted water until tender. Remove meat from bones in large pieces. Strain and reserve stock. Melt butter in saucepan, blend in flour, and gradually add milk and stock. Cook over low heat until thick and smooth, stirring constantly. Remove from heat and add curry powder, lemon juice, and mayonnaise. Beat with rotary beater until very smooth. Cook and drain broccoil. Arrange in bottom of greased 3-qt. casserole. Place pieces of chicken on top and pour sauce over all. Garnish with pimiento strips and bake at 400 F. for 20 minutes or until heated through.
