| INGREDIENTS: | ||
| 6 medium potatoes | 2 hard-boiled eggs, chopped | 4 slices bacon, diced |
| 1/4 cup minced onion | 1 egg, beaten | 1/4 cup cider vinegar |
| 1-3/4 t salt | ||
| 1 | Cook potatoes. Add chopped eggs. Fry bacon and onion until a delicate brown. Strain, reserving bacon fat. Add fat slowly to beaten egg and beat well. Add vinegar and salt and pour mixture over potatoes. Mix lightly to blend well; heat in double boiler. Serve hot. |
