Lima-Corn Fritters

8-10 fritters


INGREDIENTS:
1 cup cooked lima beans 2 cups canned or fresh corn 4 tablespoons flour
1 egg 1 teaspoon salt 1 teaspoon sugar
1/8 teaspoon pepper 1/4 cup fat for frying



1 Mash cooked beans through a coarse strainer.
2 Add corn, egg, flour and seasoning.
3 Drop mixture into hot fat and brown on each side.
