Grandmother's Dried Hay Beans

INGREDIENTS:
3 cups dried green string beans 1/4 pound bacon or salt pork 1 teaspoon salt
water to cover



1 Soak dried beans in warm water for 1 hour. Cut bacon or salt pork into small cubes and fry in a Dutch oven or heavy saucepan until slightly browned.
2 Add beans and partially cover with water. Cook until tender and most of the water is absorbed.
3 Cook until tender and most of the water is absorbed.
4 These beans, a favorite of Grandmother's day, are still enjoyed in many Mennonite families. They are dark in color and have a slight haylike flavor.
