| INGREDIENTS: | ||
| 6 Tbsp butter | 6 Tbsp flour | 3 egg yolks |
| 3 cups milk | salt to taste | red pepper to taste |
| 1 lb small shrimp, cooked | 1 lb crabmeat, flaked | 1 lb lobster meat, cut up and cooked |
| 1 | Melt butter in double boiler. |
| 2 | Add flour and eggs. Mix well. |
| 3 | Stir in milk and seasonings. Cook over medium heat until thickened. |
| 4 | Stir in seafood. Heat until warm. |
| 5 | Serve over melba toast, patty shells, or rice. |
