Mushroom-Stuffed Flounder |

| INGREDIENTS: | ||
| 2 lbs flounder | salt to taste | pepper to taste |
| 1/4 cup chopped scallions or onions | 1 cup chopped mushrooms | 1 tsp oil |
| 1/8 tsp thyme | 1 Tbsp chopped parsley | 1 tsp lemon juice |
| 1/2 tsp lemon zest | 2 tsp oil | |
| 1 | Sprinkle flounder on both sides with salt and pepper. |
| 2 | Saute onions and mushrooms in 1 tsp. oil for 5 minutes. |
| 3 | Stir in thyme. Spread mixture over flounder. |
| 4 | Roll fish up jelly-roll fashion. Fasten with toothpicks. Sprinkle with parsley, lemon juice, and zest, and 2 tsp oil. |
| 5 | Bake at 400 F. for 15-20 minutes. |
