Mushroom-Stuffed Flounder

INGREDIENTS:
2 lbs flounder salt to taste pepper to taste
1/4 cup chopped scallions or onions 1 cup chopped mushrooms 1 tsp oil
1/8 tsp thyme 1 Tbsp chopped parsley 1 tsp lemon juice
1/2 tsp lemon zest 2 tsp oil



1 Sprinkle flounder on both sides with salt and pepper.
2 Saute onions and mushrooms in 1 tsp. oil for 5 minutes.
3 Stir in thyme. Spread mixture over flounder.
4 Roll fish up jelly-roll fashion. Fasten with toothpicks. Sprinkle with parsley, lemon juice, and zest, and 2 tsp oil.
5 Bake at 400 F. for 15-20 minutes.
