Delicato Mango Salsa

INGREDIENTS:
2 mangoes, peeled and diced 1/2 cup dry white wine 3 tbsp light olive oil
salt and fresh-ground white pepper to taste



1 Simmer mango slowly in wine until soft. Puree in blender of food processor, return to heat and whisk in olive oil. Season with salt and pepper. Set aside, keep warm until served.
