INGREDIENTS:
5 rounded tablespoons chamisa or other cooking ash 1-1/2 cups boiling water 3/4 cups sugar
2 cups finely ground dark blue cornmeal 4 cups boiling water 3 dozen corn leaves that have been soaked in water and the water shaken off of them



1 Mix ashes with 1-1/2 cups of boiling water and set aside.
2 Combine cornmeal and sugar in a large mixing bowl.
3 Add 4 cups of boiling water and stir until blended.
4 Strain ash water through a cloth.
5 Add about 1 cup of ash water to cornmeal mixture, until it turns distinctly blue in color.
6 Knead dough until ash water is mixed in well. (Dough will be very thick.)
7 Wrap 2 tablespoons of dough in each corn leaf, securing with additional corn leaves as necessary.
8 Drop leaf-wrapped dough into a large pot of boiling water. Cover and simmer for thirty minutes.
