| INGREDIENTS: | ||
| 2 tablespoons rice flour | 3/4 cup coconut milk | butter |
| 1 pound dried shrimp, cleaned | 6 tablespoons flour | 2 cups milk |
| 2 tablespoons peanut butter | 2 tablespoons dende, corn, or peanut oil | salt |
| 1 | Mix rice flour with coconut milk and cook until thick. Pour into buttered mold and chill. Cook the shrimp in a little water, grind, and set aside. Make a paste of the flour and milk and cook until thick, stirring constantly with a wooden spoon. Add shrimp and peanut butter, keep on cooking, and add oil little by little. Taste for salt. Unmold the rice-flour pudding and turn this mixture over it. |
