Herring Sauce (Molho de Arenque)

INGREDIENTS:
1 herring 1 cup milk 2 tablespoons flour
2 tablespoons butter 1/2 onion, grated 1 bay leaf
3 slices lemon 3 cloves 6 whole black peppers
1 tablespoon lemon juice 1-1/2 cups bouillon 1 tablespoon beef extract
few drops lemon juice 1 egg yolk, beaten



1 Soak herring in milk for 1 hour. Remove bones and cut in small pieces. Brown flour in butter, add onion, bay leaf, lemon slices, cloves, pepper, herring pieces, bouillon, and beef extract. Cook well, add lemon juice, and press through a sieve. Add beaten egg yolk mixed with a little of the sauce. Cook until thick. This sauce is also delicious with hot boiled potatoes.
