INGREDIENTS:
4 salmon steaks 2 tablespoons seasoned flour 1 tablespoon butter
4 tablespoons double cream salt and cayenne pepper 1 teaspoon chopped fennel
2 tablespoons dry sherry 1 lemon, quartered



1 Dip the salmon steaks in seasoned flour, then lay them in a thickly buttered shallow fireproof dish. Mix the cream with the sherry and fennel, then season with a little salt and cayenne pepper. Pour this over the steaks, cover with foil and bake in a moderate oven, 375 F. (190 C.) or gas mark 5, for about half an hour. Serve with quarters of lemon.
