| 4 salmon steaks | 2 tablespoons seasoned flour | 1 tablespoon butter |
| 4 tablespoons double cream | salt and cayenne pepper | 1 teaspoon chopped fennel |
| 2 tablespoons dry sherry | 1 lemon, quartered | |
| 1 | Dip the salmon steaks in seasoned flour, then lay them in a thickly buttered shallow fireproof dish. Mix the cream with the sherry and fennel, then season with a little salt and cayenne pepper. Pour this over the steaks, cover with foil and bake in a moderate oven, 375 F. (190 C.) or gas mark 5, for about half an hour. Serve with quarters of lemon. |
