Avocado Mousse

INGREDIENTS:
1 3-ounce package lime gelatin 1/2 cup boiling water 2 tablespoons lemon juice
1/2 cup mayonnaise 1 No 1 can crushed pineapple, drained 1/2 teaspoon salt
3/4 cup whipping cream, whipped 1 cup avocado, diced 1/2 cup pineapple juice



1 Mix gelatin and water. Stir well. Stir in 1/2 cup pineapple juice. Cool. When thickened, add pineapple, salt, and lemon juice. Fold in mayonnaise, whipped cream and avocado. Place in refrigerator until firm. Serve on salad greens.
