| INGREDIENTS: | ||
| 2 lbs zucchini squash | 2 eggs, beaten | 1 medium onion, grated or cut finely |
| 1 teaspoon salt | 1/4 cup grated cheese | 1 large potato |
| 1/2 cup milk | 2 tablespoons butter, melted | pepper |
| 1/4 cup soda cracker crumbs | ||
| 1 | Wash zucchini and cut into 1/2 inch slices. Pare potato and cut into 1/2 inch cubes. Cook together in small amount of boiling salted water for 8 to 10 minutes. Drain well. Put into buttered casserole dish. Combine eggs, milk, onion, butter, salt, pepper, cheese and pour over vegetables. Sprinkle with crumbs. Bake uncovered at 325 F. for 25 minutes or until lightly browned and set. |
