Chicory (Chicoree)

INGREDIENTS:
1 head chicory salted water, to cover butter, for baking dish
juice of 1 lemon salt and pepper gravy or cream



1 Remove any wilted leaves and the stalks. Cook 5 minutes in salted water. Rinse in cold water. Place in a greased baking dish, sprinkle with lemon juice, salt and pepper and add gravy or cream to cover. Cover with wax paper and bake in moderate (350 F) oven until well done, about 25 minutes.
