Red Beets in Butter (Rote Ruben in Butter)

INGREDIENTS:
1-3/4 lbs beets, cooked 3 tbls butter 1 tsp parsley, chopped
1 tsp chives, chopped 1/2 section garlic 1 tsp flour
1 tbls vinegar salt and pepper



1 Peel and slice beets. melt butter in stew pan and add parsley, chives and garlic. Sprinkle lightly with flour and let simmer. Add beets, vinegar and seasoning and simmer for another 30 minutes. Serve with mashed potatoes.
