Mulghitov Chorba (Golden Pea Soup)

INGREDIENTS:
1 c golden split peas 1/4 c rice 3 c water
1/2 c oil 1 onion, chopped 1 T salt or to taste
1/4 tsp cayenne



1 Combine split peas, rice and water in pan. Bring to boil. Skim off foam. Reduce heat and simmer 2 hours, stirring occasionally. Heat oil in skillet over moderate heat. Add onions and saute until golden brown, stirring frequently. Stir into soup. Season to taste with salt and cayenne.
