Frozen Lemon Cream in Orange Cups |

| INGREDIENTS: | ||
| 1 cup milk | 1 cup whipping cream | 1 cup sugar |
| 1/8 teaspoon salt | 2 tablespoons grated lemon rind | 2/3 cup fresh lemon juice |
| 1/2 teaspoon lemon extract | 3 medium-size oranges | 6 lemon slices (optional) |
| 1 | Combine milk, whipping cream, sugar, and salt in a heavy saucepan; cook over medium heat, stirring constantly, until sugar dissolves. Pour mixture into a freezer tray, and freeze until firm. Spoon frozen mixture into a large mixing bowl, and beat at medium speed of an electric mixer until smooth and creamy. Add lemon rind, juice, and extract, and mix well. Return mixture to freezer tray, and freeze until slushy. |
| 2 | Cut oranges in half crosswise. Clip membrances, and remove pulp, reserving pulp for other uses. Fill orange cups with lemon mixture, freeze until firm. Garnish each orange cup with a lemon slice, if desired. |
