| INGREDIENTS: | ||
| 3 tablespoons corn oil | 4 eggs, beaten | 4 cups cooked rice, cold |
| 1/4 teaspoon chopped ginger | 1/2 cup roasted or boiled pork, cut into 1/2-inch cubes | 1/2 cup cooked chicken, cut into 1/2-inch cubes |
| 1/2 cup cooked peeled medium shrimp | 1/2 cup thinly sliced scallions | 1/4 teaspoon sesame oil |
| 1 tablespoon light soy sauce | 1/4 teaspoon salt | THE SPINACH: 1 tablespoon corn oil |
| 1 clove garlic, crushed | 1 thick slice ginger, crushed | salt to taste |
| 1/2 pound fresh spinach leaves, well rinsed | ||
| 1 | Heat the oil in a wok. Add the beaten eggs and scramble them over moderate heat. Immediately add the rice, pork, chicken, shrimp, and scallions and continue to stir-fry everything together until heated through. |
| 2 | Add the sesame oil, soy sauce, and salt and toss well. Remove and keep warm. Serve warm. |
| 3 | Make the spinach: Heat the oil in a wok or skillet. Add the garlic, ginger, and salt and stir-fry over high heat for 2 minutes. Add the spinach and stir-fry 2 minutes more until just wilted. Serve as a side dish with the rice. |
