Fried Rice with Assorted Meats (Arroz Chaufa Mixto)

INGREDIENTS:
3 tablespoons corn oil 4 eggs, beaten 4 cups cooked rice, cold
1/4 teaspoon chopped ginger 1/2 cup roasted or boiled pork, cut into 1/2-inch cubes 1/2 cup cooked chicken, cut into 1/2-inch cubes
1/2 cup cooked peeled medium shrimp 1/2 cup thinly sliced scallions 1/4 teaspoon sesame oil
1 tablespoon light soy sauce 1/4 teaspoon salt THE SPINACH: 1 tablespoon corn oil
1 clove garlic, crushed 1 thick slice ginger, crushed salt to taste
1/2 pound fresh spinach leaves, well rinsed



1 Heat the oil in a wok. Add the beaten eggs and scramble them over moderate heat. Immediately add the rice, pork, chicken, shrimp, and scallions and continue to stir-fry everything together until heated through.
2 Add the sesame oil, soy sauce, and salt and toss well. Remove and keep warm. Serve warm.
3 Make the spinach: Heat the oil in a wok or skillet. Add the garlic, ginger, and salt and stir-fry over high heat for 2 minutes. Add the spinach and stir-fry 2 minutes more until just wilted. Serve as a side dish with the rice.
