Hominy Made with Soda

INGREDIENTS:
2 tablespoons baking soda 2 cups dried white corn 2 or more quarts cold water



1 In a cooking kettle, dissolve soda in water.
2 Add corn, making sure water covers corn.
3 Cover corn and bring to a rapid boil, then reduce heat and simmer for three hours or until the hulls rub off easily. Stir occasionally for three hours or until the hulls rub off easily. Stir occasionally and add water as needed to keep corn covered.
4 Drain and rinse corn in a strainer or colander and rub kernels thoroughly to remove hulls.
5 For use at a later date, dry or freeze hominy. Otherwise, cover corn with fresh cold water and simmer for an additional four hours, or until corn is tender.
