Bean Loaf

INGREDIENTS:
3 cups cooked navy, lima or pinto beans 1/2 cup diced bacon or cheese 1 egg
1 teaspoon salt 1/8 teaspoon pepper 1 tablespoon minced parsley
2 tablespoons minced pepper 1/4 cup milk MAKE A SAUCE BY COMBINING AND COOKING TOGETHER THE FOLLOWING: 1 tablespoon butter
2 tablespoon flour 3 tablespoons chopped onion 1 cup milk
1 cup cooked tomatoes



1 Mash the cooked beans through a coarse strainer.
2 Add the other ingredients and mix well.
3 Shape into a loaf and bake in a greased loaf pan.
4 Sauce: Pour sauce over the loaf while it is baking.
5 Bake at 350 F. for 40 minutes.
