| INGREDIENTS: | ||
| 3 cups cooked navy, lima or pinto beans | 1/2 cup diced bacon or cheese | 1 egg |
| 1 teaspoon salt | 1/8 teaspoon pepper | 1 tablespoon minced parsley |
| 2 tablespoons minced pepper | 1/4 cup milk | MAKE A SAUCE BY COMBINING AND COOKING TOGETHER THE FOLLOWING: 1 tablespoon butter |
| 2 tablespoon flour | 3 tablespoons chopped onion | 1 cup milk |
| 1 cup cooked tomatoes | ||
| 1 | Mash the cooked beans through a coarse strainer. |
| 2 | Add the other ingredients and mix well. |
| 3 | Shape into a loaf and bake in a greased loaf pan. |
| 4 | Sauce: Pour sauce over the loaf while it is baking. |
| 5 | Bake at 350 F. for 40 minutes. |
