Veal Pocketbooks

INGREDIENTS:
6 thin veal steaks (about 1-1/2 pounds) 6 slices boiled ham 6 slices Swiss cheesse
2 tablespoons flour 1/4 teaspoon paprika 2 tablespoons cooking oil
1 can cream of mushroom soup 3/4 cup Sprite 3 tablespoons onion, finely chopped
hot cooked rice



1 Mix the flour and paprika and set aside. Trim the cheese and ham slices to cover the lower half of the veal steaks. Fold the veal over to enclose the cheese and ham and carefully dip each piece in the flour mixture. In a large skillet, heat the oil and brown the meat slowly until crusty, being very careful to keep the meat and filling intact. Drain off the excess fat in the pan. Combine the soup, cream, Sprite and onions and pour over the meat. Cover and cook over low heat for 30 minutes. Serve with hot rice.
