Taos Rabbit

INGREDIENTS:
1 medium rabbit 2 tbsp oil 1 onion, chopped
1 tbsp red chili powder 1 tsp salt 1 cup vinegar
2 quarts water 1/2 cup cornmeal



1 Cut rabbit into serving pieces, place oil in large saucepan and brown rabbit in oil. Add remaining ingredients (except cornmeal) and simmer for 1-1/2 hours or until meat is tender. Add cornmeal gradually to pan, blending thoroughly. Simmer 10 minutes until the sauce thickens.
