Fresh Thyme Salad (Salatet Za'tar Akhdar)

INGREDIENTS:
2 bunches thyme (about 7oz on the stalk) 1 medium onion, very finely chopped 2 teaspoons sumac, or more to taste
salt to taste 4 tablespoons extra virgin olive oil



1 Strip the thyme leaves off their stalks, wash them in cold water and dry them. Put the thyme in a salad bowl, add the chopped onion, sprinkle with sumac and salt to taste, pour in the oil and toss together. Taste, adjust seasoning if necessary, and serve immediately.
2 This salad is also a perfect accompaniment to roast lamb.
