| INGREDIENTS: | ||
| 2 bunches thyme (about 7oz on the stalk) | 1 medium onion, very finely chopped | 2 teaspoons sumac, or more to taste |
| salt to taste | 4 tablespoons extra virgin olive oil | |
| 1 | Strip the thyme leaves off their stalks, wash them in cold water and dry them. Put the thyme in a salad bowl, add the chopped onion, sprinkle with sumac and salt to taste, pour in the oil and toss together. Taste, adjust seasoning if necessary, and serve immediately. |
