INGREDIENTS:
kippers parsley butter whole black pepper in mill



1 Take a grill pan and cover it in cooking-foil (this greatly simplifies the elimination of clinging fishy flavours), remove the heads and tails of the kippers, gind a little black pepper over them on the inside and grill under a moderate gill for 3 to 4 minutes starting with the skin side next the heat and turning to avoid burning. Serve on very hot plates with a knob of butter and a lemon wedge on each.
