Broccoli-Chicken Quiche

INGREDIENTS:
1 cup chopped broccoli stems and florets 1 cup chopped cooked chicken 1/2 cup chopped onion
4 ounces Swiss cheese, shredded (about 1 cup) 2 tablespoons chopped parsley 1-1/2 cups evaporated skim milk
3 eggs 1/2 teaspoon garlic powder 1/8 teaspoon cayenne pepper
1/8 teaspoon grated nutmeg



1 Preheat oven to 400 F. Butter a 10-inch glass pie plate (or spary with vegetable cooking spray). Arrange broccoli, chicken, onion, cheese, and parsley in bottom of dish.
2 Combine remaining ingredients and beat smooth with electric mixer, blender, or food processor. pour over broccoli mixture.
3 Bake uncovered 30 minutes, until knife inserted near center comes out clean. Cool 10 minutes. Cut into wedges and serve.
