Turkey Cakes

INGREDIENTS:
1 cup finely chopped cold cooked turkey 1/4 teaspoon salt 1/4 teaspoon pepper
1 egg, beaten 1 tablespoon flour 1 tablespoon heavy cream
3 tablespoons melted butter SAUCE: 1/2 cup butter 1/2 cup flour
1/2 cup milk, warmed 1/3 cup chopped cooked celery 1 teaspoon chopped chives
3 tablespoons heavy cream



1 In a bowl mix together turkey, seasonings, and beaten egg. Sprinkle in flour. Mix and add cream. Form into small cakes and fry in hot butter. Arrange on a hot platter and pour around them the following sauce.
2 SAUCE: Make a white sauce of the butter and flour and cook 5 minutes. Add warm milk and cook until smooth. Add celery and chives. Let heat up and remove from fire. Stir in cream; pour around cakes.
