| INGREDIENTS: | ||
| 1/4 stick butter | 1 onion, chopped fine | 1 fresh tomato, chopped fine |
| 1 mild chile or green bell pepper, chopped fine | 1-1/2 cups bulgur wheat | 4-1/2 cups hot chicken stock or water |
| 1 tbsp tomato paste | salt and ground black pepper | |
| 1 | Melt the butter in a saucepan and fry the onion until translucent. Add the tomato and chile or bell pepper, and, stirring continuously, cook for a few minutes. |
| 2 | Add the bulgur wheat, season, and stir over high heat for 1 minute. |
| 3 | Pour over the hot chicken stock or water, stir in the tomato paste, and season with salt and pepper. Cook over medium heat until the liquid is absorbed. |
| 4 | Allow to rest over very low heat for 5 minutes before serving. |
