Bulgur Wheat Pilaf (Bulgur Pilavi)

INGREDIENTS:
1/4 stick butter 1 onion, chopped fine 1 fresh tomato, chopped fine
1 mild chile or green bell pepper, chopped fine 1-1/2 cups bulgur wheat 4-1/2 cups hot chicken stock or water
1 tbsp tomato paste salt and ground black pepper



1 Melt the butter in a saucepan and fry the onion until translucent. Add the tomato and chile or bell pepper, and, stirring continuously, cook for a few minutes.
2 Add the bulgur wheat, season, and stir over high heat for 1 minute.
3 Pour over the hot chicken stock or water, stir in the tomato paste, and season with salt and pepper. Cook over medium heat until the liquid is absorbed.
4 Allow to rest over very low heat for 5 minutes before serving.
