| INGREDIENTS: | ||
| 1 woodchuck | 1 tbsp salt | 1 cup flour |
| 1/2 tsp salt | 1/4 tsp pepper | 1/4 cup fat |
| 1 | Skin and clean woodchuck and cut into 6 to 7 pieces. Put in pot, add salt and enough water to cover, and parboil for 1 hour. |
| 2 | Remove meat from the broth, and drain. Dredge meat in flour, salt and pepper. Melt fat in heavy skillet and saute woodchuck until nicely browned. |
