Fried Woodchuck

INGREDIENTS:
1 woodchuck 1 tbsp salt 1 cup flour
1/2 tsp salt 1/4 tsp pepper 1/4 cup fat



1 Skin and clean woodchuck and cut into 6 to 7 pieces. Put in pot, add salt and enough water to cover, and parboil for 1 hour.
2 Remove meat from the broth, and drain. Dredge meat in flour, salt and pepper. Melt fat in heavy skillet and saute woodchuck until nicely browned.
