Hopi Fry Bread (Wequivi)

INGREDIENTS:
4 cups white all-purpose flour 5 teaspoons baking powder 1-1/2 teaspoons salt
2 to 2-1/4 cups water shortening, as needed



1 Mix flour, baking powder, and salt in a large bowl.
2 Gradually stir in water to make a soft dough.
3 Continue stirring until dough is smooth and shiny.
4 Cover bowl with a clean towel and set aside for thirty minutes.
5 Shape dough into 16 balls, about the size of an egg, and roll them on a lightly floured board to 1/2-inch thickness or less.
6 Pour shortening 1-1/2 inches deep in a heavy frying pan and heat until it is just before the smoking point.
7 Place dough into hot fat, turning with a fork when it has browned on one side until it is golden brown on both sides.
8 Drain on absorbent paper.
