| INGREDIENTS: | ||
| 2 flour tortillas | 4 eggs | 1/4 cup heavy cream |
| salt | 2 teaspoons butter | 2 poblanos, roasted, peeled, seeded and diced |
| 1/4 cup sour cream | chopped red oinion, jalapeno, cilantro, and tomatoes for garnish | |
| 1 | Wrap tortillas in foil and warm in 350 degress F. oven 10 minutes. |
| 2 | Lightly beat eggs with cream and salt. Melt butter in medium skillet over medium heat. Pour in eggs and then diced poblanos. Reduce heat and stir constantly until small soft curds form. Remove from heat. |
| 3 | Place each tortilla on a plate. Spread with sour cream. Spoon eggs in center. Top with onion, jalapenos, cilantro, and tomatoes. |
| 4 | Fold to enclose, and serve. |
