Smooth Jalapeño Salsa

INGREDIENTS:
1 tablespoon vegetable oil 1/2 medium onion, chopped 2 garlic cloves, crushed
1 medium tomato, peeled and chopped 1/2 teaspoon salt 4 to 6 jalapeños, stemmed, seeded, and chopped



1 In skillet, heat oil over medium heat.
2 Add onion and saute until soft. Add garlic and cook 30 seconds then stir in tomato and salt. Simmer 5 minutes. Transfer to blender and add jalapeños. Process until pureed. Serve room temperature or chilled with lightly sauteed vegetables or chips.
