Banana Muffins

INGREDIENTS:
3 cups brand cereal 1 cup mashed banana (about 3 small) 3/4 cup skim milk
2 egg whites or 1/3 cup cholesterol free egg product 2 tablespoons vegetable oil 1-1/2 cups all-purpose flour
2 tablespoons packed brown sugar 1 tablespoon baking powder



1 Preheat oven to 400 F.
2 Coat with nonstick cooking spray or paper-line 12 (2-1/2 inch) muffin cups. In medium bowl, combine cereal, banana, milk, egg whites and oil. Let stand 5 minutes. In large bowl, combine flour, sugar and baking powder. Add cereal mixture to flour mixture all at once, stirring just until moistened. Spoon into muffin cups. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Remove from pan.
