INGREDIENTS:
2-1/3 cups crunchy bran cereal finely crushed to 1 cup 1-1/2 cups all-purose flour 1/3 cup packed brown sugar
4 teaspoons baking powder 1 teaspoon ground cinnamon 1 cup chopped pitted prunes
1-1/4 cups 2% low-fat milk 1/3 cup vegetable oil 1 egg



1 Heat oven to 400 F. Grease or paper-line 12 (2-1/2 inch) muffin cups. In large bowl, combine cereal, flour, brown sugar, baking powder and cinnamon. Stir in prunes. In small bowl, combine milk, oil and egg. Add to flour mixture, stirring just until moistened. Fill muffin cups almost full. Bake 25 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan. Cool on wire rack.
