| INGREDIENTS: | ||
| 3 cups oat bran cereal | 1-1/2 cups mashed banana (3 medium) | 3 egg whites or 2/3 cup cholesterol free egg product |
| 2 tablespoons skim milk | 1/2 teaspoon salt | 2 tablespoons vegetable oil |
| 1 cup all-purpose flour | 2 tablespoons packed brown sugar | 1 tablespoon baking powder |
| 1/4 cup chopped walnuts | ||
| 1 | Preheat oven to 400 F. Coat with nonstick cooking spray or paper-line 12 (2-1/2 inch) muffin cups. In medium bowl, combine cereal, banana, egg whites, milk and oil. Let stand 5 minutes. In large bowl, combine flour, sugar and baking powder. Add cereal mixture to flour mixture, stirring just until moistened. Spoon into muffin cups. Sprinkle with nuts. Bake 20-25 minutes or until wooden pick inserted in center comes out clean. Remove from pan. |
