Banana Walnut Muffins

INGREDIENTS:
3 cups oat bran cereal 1-1/2 cups mashed banana (3 medium) 3 egg whites or 2/3 cup cholesterol free egg product
2 tablespoons skim milk 1/2 teaspoon salt 2 tablespoons vegetable oil
1 cup all-purpose flour 2 tablespoons packed brown sugar 1 tablespoon baking powder
1/4 cup chopped walnuts



1 Preheat oven to 400 F. Coat with nonstick cooking spray or paper-line 12 (2-1/2 inch) muffin cups. In medium bowl, combine cereal, banana, egg whites, milk and oil. Let stand 5 minutes. In large bowl, combine flour, sugar and baking powder. Add cereal mixture to flour mixture, stirring just until moistened. Spoon into muffin cups. Sprinkle with nuts. Bake 20-25 minutes or until wooden pick inserted in center comes out clean. Remove from pan.
