Anise Ice Cream

INGREDIENTS:
8 egg yolks 3/4 cup sugar 1 teaspoon salt
1-1/2 cups cream 3-1/2 cups milk 3 tablespoons anise seed
1 tablespoon Pernod



1 In a medium-size bowl, whisk together yolks, sugar and salt. In a heavy-bottomed saucepan, combine cream, milk and anise seed and bring to a boil. Remove from heat and gradually whisk milk mixture into yolk mixture. Return to the pan, and cook over low heat, stirring constantly, until custard coats the back of the spoon and leaves a clean track when you run your finger through it.
2 Strain into a bowl set over a bowl of ice water. Cool for 15 minutes, stir in Pernod and chill mixture, covered, for 2 hours or until cold. Freeze according to ice cream machine manufacture's instructions.
