Preheat oven to 400 F. Coat with nonstick cooking spray or paper-line 12 (2-1/2-inch) muffin cups. In medium bowl, combine cereal, juice, apple, brown sugar, egg whites and oil. Let stand 5 minutes. In large bowl, combine flour and baking powder. Add cereal mixture to flour mixture all at once, stirring just until moistened. (Batter will be stiff.) Spoon into muffin cups. In small bowl, combine granulated sugar and cinnamon. Sprinkle over muffins. Bake 20-25 minutes or until wooden pick inserted in center comes out clean. Remove from pan. |
