Curried Turkey Spaghetti

INGREDIENTS:
6 ounces uncooked spaghetti 1/2 pound ground turkey or beef 1 medium onion, chopped (1/2 cup)
1 clove garlic, finely chopped 1/4 cup chopped fresh parsley 1/4 cup apple juice
1-1/2 teaspoons curry powder 1/2 teaspoon ground cumin 1/8 teaspoon ground red pepper (cayenne)
1 medium unpeeled tart eating apple, chopped (3/4 cup) 1 can (16 ounces) whole tomatoes, undrained 2 tablespoons chopped peanuts, if desired



1 Cook and drain spaghetti as directed on package. While spaghetti is cooking, cook turkey, onion and garlic in 10-inch skillet over medium heat, stirring occasionally, until turkey is no longer pink; drain.
2 Stir in remaining ingredients except peanuts, breaking up tomatoes. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes, stirring occasionally, until apple is tender. Serve sauce over spaghetti. Sprinkle with peanuts.
