| INGREDIENTS: | ||
| 6 ounces uncooked spaghetti | 1/2 pound ground turkey or beef | 1 medium onion, chopped (1/2 cup) |
| 1 clove garlic, finely chopped | 1/4 cup chopped fresh parsley | 1/4 cup apple juice |
| 1-1/2 teaspoons curry powder | 1/2 teaspoon ground cumin | 1/8 teaspoon ground red pepper (cayenne) |
| 1 medium unpeeled tart eating apple, chopped (3/4 cup) | 1 can (16 ounces) whole tomatoes, undrained | 2 tablespoons chopped peanuts, if desired |
| 1 | Cook and drain spaghetti as directed on package. While spaghetti is cooking, cook turkey, onion and garlic in 10-inch skillet over medium heat, stirring occasionally, until turkey is no longer pink; drain. |
| 2 | Stir in remaining ingredients except peanuts, breaking up tomatoes. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes, stirring occasionally, until apple is tender. Serve sauce over spaghetti. Sprinkle with peanuts. |
