| INGREDIENTS: | ||
| 1 package (8oz) pitted dates, coarsely chopped | 3/4 cup boiling water | 1/4 cup corn oil |
| 1/2 teaspoon vanilla | 1 cup all-purpose flour | 1/2 cup whole wheat flour |
| 1/2 cup whole wheat flour | 1/2 cup sugar | 1/3 cup coarsely chopped walnuts |

| 1 | In large bowl, combine dates, water, oil and vanilla; stir to mix. In medium bowl, combine flours, sugar, walnuts and baking soda. Add to date mixture, stirring just until moistened. Spoon into 12 greased 2-1/2 inch muffin cups. Bake in preheated 375 oven 25 minutes or until wooden pick inserted in center comes out clean. Remove from pan. Serve warm or cool on wire rack. |
