Birds of Paradise in Lettuce Packages

INGREDIENTS:
1 head iceberg lettuce Paradise Dipping Sauce (recipe follows) 3 tablespoons soy sauce
1 tablespoon dry sherry 1 large clove garlic, pressed 1/2 teaspoon ground ginger
4 boneless chicken breast halves 1 cup fresh cilantro leaves 1/2 small cucumber, cut in half lengthwise, seeded and cut into julienne strips (about 1 cup)
Paradise Dipping Sauce: 1/3 cup sugar 1/3 cup rice vinegar 1/4 teaspoon crushed red pepper
2 teaspoons lite soy sauce



1 Core, rinse and thoroughly drain lettuce; refrigerate in large plastic food storage bag. Prepare Paradise Dipping Sauce; cool. Blend soy sauce, sherry, garlic and ginger in small bowl; pour over chicken in large plastic food storage bag. Press air out of bag; close top securely. Refrigerate 1 hour; turn bag over occasionally. Meanwhile, carefully separate leaves from lettuce head. (Cut leaves lengthwise in half, if large.) Arrange on serving platter with cilantro and cucumber. Place chicken, skin side down, on rack of broiler pan. Broil about 5 minutes on each side, or until no longer pink in center. Silce each breast into 4 or 5 pieces; arrange on separate platter. To serve, place 1 piece of chicken in lettuce leaf; top with desired amount of cilantro and cucumber. Wrap lettuce around filling to enclose and serve with Paradise Dipping Sauce.
2 Paradise Dipping Sauce: Combine sugar, vinegar and crushed red pepper in small saucepan; bring to boil. Reduce heat; simmer 1 minute. Remove from heat; stir in lite soy sauce.
