Core, rinse and thoroughly drain lettuce; refrigerate in large plastic food storage bag. Prepare Paradise Dipping Sauce; cool. Blend soy sauce, sherry, garlic and ginger in small bowl; pour over chicken in large plastic food storage bag. Press air out of bag; close top securely. Refrigerate 1 hour; turn bag over occasionally. Meanwhile, carefully separate leaves from lettuce head. (Cut leaves lengthwise in half, if large.) Arrange on serving platter with cilantro and cucumber. Place chicken, skin side down, on rack of broiler pan. Broil about 5 minutes on each side, or until no longer pink in center. Silce each breast into 4 or 5 pieces; arrange on separate platter. To serve, place 1 piece of chicken in lettuce leaf; top with desired amount of cilantro and cucumber. Wrap lettuce around filling to enclose and serve with Paradise Dipping Sauce. |
