INGREDIENTS:
Soy Dipping Sauce (recipe follows) 1/2 pound lean ground pork 1-1/2 cups coarsely shredded green cabbage
3 tablespoons minced green onions and tops 2 teaspoons soy sauce 2 teaspoons minced fresh ginger root
2 cloves garlic, pressed 1/2 teaspoon cornstarch 1/8 tespoon salt
24 potsticker or gyoza wrappers 2 tablespoons vegetable oil, divided 2/3 cup water, divided



1 Prepare Soy Dipping Sauce. Combine pork, cabbage, green onions, soy sauce, ginger, garlic, cornstarch and salt in large bowl; whip mixture with fingers or fork in one direction until light and fluffy. Arrange several potsticker wrappers on clean surface; cover remaining wrappers to prevent drying out. Place about 1 tablespoonful pork mixture in center of each wrapper. Moisten top edge with water. Fold wrappers in half to enclose filling. Press edges together and make 3 small pleats along top edge to seal. Repeat with remaining wrappers. Heat 1 tablespoon oil in hot medium-size nonstick skillet over medium heat; swirl pan to cat evenly. Add 12 filled potstickers in single layer, flat side down. Cook about 3 minutes, or until golden brown. Add 1/3 cup water; cover and reduce heat to medium-low. Simmer 6 minutes, or until skillet is dry. Remove cooked potstickers to serving platter; keep warm. Repeat procedure with remaining oil, potstickers and water. Serve potstickers, brown side up, with Soy Dipping Sauce.
2 Soy Dipping Sauce: Combine 2 tablespoons each soy sauce and distilled white vinegar, 1 tablespoon sesame oil and 1/2 teaspoon hot pepper sauce in small bowl.
