In medium bowl, combine 1-3/4 cups of the flour, 1/4 cup of the sugar, the baking powder, baking soda and salt. In small bowl, combine egg, milk, applesauce and butter; mix well. Add egg mixture to flour mixture, stirring just until moistened. Batter will be lumpy. In small bowl, toss cranberries with remaining 2 tablespoons flour; fold into batter. Spoon batter into 12 greased 2-1/2 inch muffin cups. In another small bowl, combine remaining 1/4 cup sugar and the cinnamon. Sprinkle over muffins. Bake in preheated 400 F oven 20-25 minutes or until woodend pick inserted in center comes out clean. Remove from pan; cool on wire rack. |
