| INGREDIENTS: | ||
| 8 ounces Ricotta | 3 tablespoons butter | 4 egg yolks |
| 3/4 cup all-purpose flour | 1/4 cup bread crumbs | 2 teaspoons salt |
| dash of black pepper | 4 egg whites, beaten stiff | |
| 1 | Cream butter; add egg yolks, one at a time, beating after each addition. Add ricotta, flour, bread crumbs, salt and pepper, mixing well. Fold in egg whites. Drop by spoonfuls into boiling salted water, cover and cook over medium heat 10 minutes. Drain well and serve at once. |
