Amhari-Atklit (Vegetable Stew)

INGREDIENTS for 6 servings:

  • 2 tablespoons extra virgin olive oil
  • 2 cups onion, cut into large dice
  • 2 large carrots, peeled and cut into 1/2-inch diagonals (2 cups)
  • 1/2 pound thin-skinned potatoes, peeled and cut into 3/4-inch chunks (2 cups)
  • 1/4 head of a medium cabbage, cut into 3/4-inch chunks (2 cups)
  • 1 tablespoon minced fresh ginger
  • 1/2 teaspoon turmeric
  • 1 teaspoon mustard seed
  • 2 tablespoons tomato paste
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 pound green beans, trimmed and cut into 1-inch pieces (2 cups)

 

1 Warm the oil in a large pot. Add the onion, carrots, potatoes, and cabbage and cook over medium-low heat about 8 minutes, until the onion is softened. Add the ginger, turmeric, mustard seed, and tomato paste and stir to combine. Add the water and salt and cover. Cook until the vegetables are tender, and additional 15 minutes or so. Taste and adjust the salt if necessary.
